sweet potato + black bean enchiladas.
A wonderful recipe everyone {vegan or not} should try!!! I added rotisseree chicken and a little shredded mozzerella cheese this time- even though he enjoyed it the regular way, Brian is carnivorous and would prefer to have a little meat with his potatoes!!!
