This is the Perfect recipe for the 4th of July!!! My friend Bryant made this for bible study once or twice during spring training and EVERYONE devoured it. Once you try it, it will become one of your staple "party foods" for sure!!
Bryant’s Texas Caviar
Serves: A LOT
Ingredients:
2 cans of shoe peg corn
1 can of pinto beans
1 can of black eyed peas
1 can black beans (I added them to the recipe since they can be used in place of any of the beans you can’t find, but they are good any ways)
1 bunch of green onions
3 stalks of celery
1 red pepper
1 brick pepper jack cheese
¾ cup apple cider vinegar (I add a little extra vinegar)
¾ cup vegetable oil (I use light olive oil as well)
¾ cup sugar (I use half Splenda and half granulated sugar)
Instructions:
Dice the celery, pepper, green onion, and pepper jack and put in large bowl. Add the canned items (drained) In a separate bowl mix the oil, vinegar, and sugar. Pour over and let marinate at least 30 min in the fridge!
Serve with Scoops (they just work the best)
