A super easy soup recipe that is great and great for you!!!
Chicken Tortilla Soup
4 chicken breast, boneless cut into bite size pieces-seasoned with salt and pepper
7 cups low sodium chicken broth
2-15 oz can black beans, drained and rinsed
2-15 oz can whole kernel corn, drained
2-14 oz can diced tomatoes w/chilies, not drained
2-4 oz can diced mild green chilies
6, 6in corn tortillas, cut into 1/8 in slices.
2 tsp cumin
half bunch of cilantro
In a large pot saute chicken in EVOO until cooked through. Add broth, beans,corn, tomatoes and chiles. Simmer for 10 minutes. Add tortillas, cumin and cilantro and simmer for 10 more minutes.
Garnish with shredded cheese, sliced avocado and sour cream & a squeeze of lime:)

I got this from you a few years ago and make it all the time. :) It's a great one!
ReplyDeleteSounds yummy! I make something similar except I leave the chicken breasts whole and just dump it all in the crock-pot. I'll have to try this out since the crock-pot is one of the "luxury" items that doesn't make the cut during the season.
